Japanese Sweet Potato Fries

If you haven’t tried a Japanese sweet potato, you really need to! This root vegetable has a deep magenta skin and white flesh that turns a pale golden tone as it cooks. They’re drier and creamier than orange-fleshed sweet potatoes. They are also not as sweet tasting like an orange sweet potato – they are more of an earthy, chestnutty sweetness rather than a sugary one. Also, Japanese sweet potatoes are more dense and luscious. If you find sweet potatoes a bit too sweet then you need to give Japanese sweet potatoes a try. You can steam them whole and enjoy them or cut them into fries and bake them. Here is a quick and easy recipe for Japanese sweet potato fries that you can make in your air fryer or oven.

Instructions
  1. If you are using your oven, preheat to 400 degrees. Wash and scrub your sweet potato and slice into thin strips. Place the sweet potato fries in a bowl.
  2. Toss the sweet potato fries with oil and sprinkle in cornstarch or arrowroot powder and make sure the fries are evenly coated.
  3. Place in your air fryer for 18 minutes, check halfway to make sure the sweet potato fries are cooking evenly. Your air fryer may require a shake. If you are using your oven bake for 20-25 minutes. Again, check-in and flip the fries so they are cooking evenly. More time may be needed to achieve the desired crispiness.
  4. Once your sweet potato fries are golden brown and crispy remove from the oven/air fryer and place them on a plate. Sprinkle with red chili powder and salt. Enjoy.
