27 Feb Almond Oatmeal Chocolate Chip Cookies
Starting the weekend with freshly baked cookies. I tweaked this recipe and decreased the sugar and added in high fiber goodness. Perfect for heart health awareness month and Valentine’s. This recipe makes 3 dozen, perfect for sharing!

Ingredients
- 1.5 cups Almond Flour
- 3 cups rolled oats
- 1/4 cup flaxseed powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 2 large eggs
- 1/3 cup butter or coconut oil
- 2 tsp vanilla
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1/4 cup granulated sugar I swapped in 1 cup maple syrup and it was just as good
- 3/4 cup mini choc chips you can also reduce to 1/2 cup

Instructions
- Preheat over to 350 and line baking sheet with parchment paper. Set aside.
- Whisk the flour, oats, flax powder, salt, cinnamon, and baking soda. Set aside.
- In a large bowl using a hand blender or mixer beat butter/oil until smooth, add in sweeteners and beat for 1 min.
- Add in eggs and vanilla and mix until combined.
- Add dry ingredients to wet and mix on low until it’s well combined. The dough will be sticky. Chill for 30 min before rolling.
- Roll dough about 2 tbsp worth and place 4” apart.
- Bake for 12-14 min and let cool.
