01 Mar Lentil Rice
A great way to boost the nutrition to regular rice is to add some lentils to it! I like making a large pot of lentil rice – its great to have with curries or on its own topped with some plain Greek yogurt for an extra protein punch! All you need to do is soak 1/4 cup of split mung lentils for a few hours and add that to 1 cup of rice when it’s cooking! Easy peasy!

Ingredients
- 1/4 cup split yellow mung daal soak for a few hours to soften and speed up cooking time
- 1 cup basmati rice cook 1 cup rice with 2 cups of water
- 1 tsp Ghee
- pinch of salt

Instructions
- Boil 2 cups of water in a large pot on the stove
- Add 1 cup of basmati rice and 1/4 cup of drained split mung daal
- Let rice and mung cook - once rice and mung daal have cooked. Turn stove on low heat and cover lentil rice for a few minutes
- Turn stove off and add 1 tsp ghee and a pinch of salt and enjoy!
