24 Feb Semi-Homemade Fish Tacos
As a busy mom, getting a quick weekday meal together is essential especially on days when the kids have activities. Taking advantage of ready-made items at the grocery store is a huge time saver. Adding veggies is such an easy and delicious way to round any meal and boost nutrition!
I picked up these fish bites along with a broccoli slaw to make this meal!

Ingredients
- 6 corn tortillas toast on a skillet until tortillas are warmed through
- 1 box Jane's fish bites Cook according to package instructions
Mayo Sauce
- 2 tbsp light Mayo
- 1/2 juice of a lime
- salt and pepper
- 1 tbsp water
- 1/2 tsp cayenne pepper
- chopped cilantro for garnish
Guacamole
- 2 avocados
- 2 cloves cloves of garlic, minced
- 2 tbsp chopped red onion
- 1/2 tsp salt
- 1/2 tsp red chili powder
- juice of 1/2 a lime
- 1/2 chopped tomato - seeds taken out
- chopped cilantro for garnish

Instructions
- Cook fish bites according to package directions.
Guacamole
- While fish bites are cooking, prepare the guacamole. In a large bowl, scoop the insides of avocado add the garlic, tomato, onion, seasoning and cilantro. Add more lime juice if needed. Set aside
Spicy mayo sauce
- In a bowl add the mayo, lime juice, and seasoning. Slowly add the water to thin mayo out. More water may be needed until a thin consistency is reached.
- Once tortillas are warmed up, place 4 fish bites on each corn tortilla, add slaw and some guacamole. Top with spicy mayo sauce and garnish with cilantro and a fresh squeeze of lime juice
