This salad is bursting with so much flavour and healthy goodness! From nutrient-dense red cabbage, crispy romaine, edamame for some healthy fat, and a delicious crunch from chow mein noodles and almonds – this salad is packed with texture and taste. I added chicken for protein but you can easily make this a vegetarian dish by skipping the chicken altogether since this salad has a great dose of plant protein from almonds and edamame. This chicken salad is a perfect meal during the week that can be assembled in less than 25 minutes. Using grocery store short cuts such as shredded carrots, store-bought rotisserie chicken, and frozen shelled edamame makes meal prep a breeze. The dressing is simple and super fresh and you likely have all the ingredients on hand. Give it a try, you won’t regret it!

- 2 cups rotisserie chicken shredded Add a few tablespoons of ginger dressing (recipe below) and let sit for 10 minutes.
- 4 cups chopped romaine lettuce
- 1 cup red cabbage shredded
- 1/4 cup green onions chopped
- 1/2 cup cooked shelled edamame Prepare by reading package instructions - boil on stove top for a few minutes
- 1/2 cup shredded carrots
- 2 tbsp chopped cilantro
- 1/2 cup chow mein noodles or wonton strips
- 2 tbsp slivered almonds Swap in sesame seeds to make this nut free
- 1/4 cup sesame oil
- 2 tbsp rice vinegar
- 1 clove garlic minced
- 1 tsp minced ginger
- 1 tbsp low sodium soy sauce
- 2 tbsp water
- 1.5 tbsp honey Add more if needed
- 1 tsp crushed red chili flakes
- 1/2 tsp sesame seeds
- black pepper

- In a bowl, whisk in sesame oil and rice vinegar. Stir in soy sauce, ginger, garlic, and honey. Add in remaining ingredients and whisk well until everything is incorporated.
- Let the dressing sit for 10 minutes to allow the flavours to combine. Taste and adjust seasonings as needed. Assemble the salad during this time.
- In a small bowl add in the shredded chicken and pour in 2 tbsp of ginger sesame dressing, mix and set aside.
- In a large bowl assemble the remaining salad fixings.
- Add in the marinated shredded chicken.
- Pour in the ginger dressing, a few tablespoons at a time. Be careful not to overdress the salad.
- Serve immediately and enjoy!
