Asian Chicken Salad

This salad is bursting with so much flavour and healthy goodness! From nutrient-dense red cabbage, crispy romaine, edamame for some healthy fat, and a delicious crunch from chow mein noodles and almonds – this salad is packed with texture and taste. I added chicken for protein but you can easily make this a vegetarian dish by skipping the chicken altogether since this salad has a great dose of plant protein from almonds and edamame.  This chicken salad is a perfect meal during the week that can be assembled in less than 25 minutes. Using grocery store short cuts such as shredded carrots, store-bought rotisserie chicken, and frozen shelled edamame makes meal prep a breeze.  The dressing is simple and super fresh and you likely have all the ingredients on hand. Give it a try, you won’t regret it!

Instructions
Ginger Sesame Dressing
  1. In a bowl, whisk in sesame oil and rice vinegar. Stir in soy sauce, ginger, garlic, and honey. Add in remaining ingredients and whisk well until everything is incorporated.
  2. Let the dressing sit for 10 minutes to allow the flavours to combine. Taste and adjust seasonings as needed. Assemble the salad during this time.
Chicken Salad
  1. In a small bowl add in the shredded chicken and pour in 2 tbsp of ginger sesame dressing, mix and set aside.
  2. In a large bowl assemble the remaining salad fixings.
  3. Add in the marinated shredded chicken.
  4. Pour in the ginger dressing, a few tablespoons at a time. Be careful not to overdress the salad.
  5. Serve immediately and enjoy!
