In a bowl, whisk in sesame oil and rice vinegar. Stir in soy sauce, ginger, garlic, and honey. Add in remaining ingredients and whisk well until everything is incorporated.
Let the dressing sit for 10 minutes to allow the flavours to combine. Taste and adjust seasonings as needed. Assemble the salad during this time.
Chicken Salad
In a small bowl add in the shredded chicken and pour in 2 tbsp of ginger sesame dressing, mix and set aside.
In a large bowl assemble the remaining salad fixings.
Add in the marinated shredded chicken.
Pour in the ginger dressing, a few tablespoons at a time. Be careful not to overdress the salad.
