27 Feb Delicious Bran Flax Muffins
These high fiber muffins are soft, fluffy, and delicious! Instead of oil or butter, I used applesauce – because of its water content, applesauce will also keep these muffins moist and fresh longer. These muffins are nut-free and filled with wholesome goodness, and great for kids to take to school.

Ingredients
- 2.5 cups Natural wheat bran
- 1/2 cup Flax meal
- 2 cups oat flour you can grind up rolled oats
- 2/3 cup unsweetened applesauce
- 2 cups buttermilk if you don’t have buttermilk, add 2 tbsp of vinegar to 2 cups of milk of your choice
- 3/4 cup maple syrup
- 2 tsp vanilla
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1/3 cup mini chocolate chips
- 2 medium or large eggs

Instructions
- Preheat oven to 375 and keep greased muffin tin ready
- In a large bowl, combine bran and flax meal add buttermilk, let this sit for 5 min.
- Add in applesauce, maple syrup, eggs and vanilla stir to combine.
- In another bowl add oat flour, salt, cinnamon, baking powder and baking soda.
- Add the bran/flax mixture to the oat flour mix and gently stir until everything is combined.

- Spoon into muffin tins and bake for 15-17 min.
