  1. In a small bowl prep the vinegarette. Add in juice of lime, olive oil and garlic. Season with salt pepper and cayenne. Taste and adjust if needed. ⠀
  2. In medium bowl add in tomatoes, cucumbers, corn kernels, herbs, and onions. Stir in dressing about 30 min before serving and place in the fridge.
  3. Top with diced avocado right before serving!⠀
