Roasted cauliflower is so simple and so delicious! Cauliflower is a nutritious low-carb cruciferous vegetable that is great at regulating blood sugar levels.
When it comes to serving vegetables, roasting them is just about the easiest and most delicious way to do it. When you roast veggies you get a caramelized exterior, good flavour, and tender texture. I used a tahini dressing on the roasted cauliflower and it was so good!
This dish is packed with vitamins, fibre and healthy fats which is great for blood sugar balance.

Ingredients
Cauliflower
- 1 cauliflower broken into florets
- 1-2 tbsp olive oil
- 2 tbsp Montreal steak seasoning
Dressing
- 2 cloves garlic minced
- 1/4 cup tahini
- 1/4 lemon juiced
- 1/2 tsp salt
- 1/4 tsp ground cumin
- water to thin out until reaching desired consistency

- Preheat the oven to 400F.
- Cut the cauliflower into florets and rinse. Place florets on a lined baking sheet, add olive oil, and seasoning of choice.
- Give the cauliflower a good mix before roastng in the oven for 25-30 minutes.
Tahini Dressing
- In a small bowl, add the tahini and whisk in the lemon juice, garlic, and seasoning.
- Keep mixing and add water until the desired consistency is reached.
- Taste and adjust seasonings as needed. The dressing can be stored for about a week in an airtight container.
