Roasted Acorn Squash

Roasted acorn squash is a delicious way to embrace Fall. Its firm yellow-orange flesh has a mild and sweet flavored- very similar to a sweet potato. Acorn squash is the most nutrient dense member of the squash family. It contains tons of vitamins especially vitamin A and C, magnesium, potassium, fibre and antioxidants such as beta-carotene! It’s super easy to make.

  1. Line a baking sheet with parchment paper
  2. Assemble acorn pieces on baking sheet. Add oil, salt and pepper, and cheese. Make sure each piece is coated well.
  3. Bake in the oven at 425 for 35 minutes and enjoy!
