This classic Pico de Gallo recipe comes together in minutes and is so fresh and healthy and it’s a delicious way to get in your veggies! This medley of fresh veggies, herbs and lime juice is not only low calorie and low fat but also jammed packed with flavour, vitamins and antioxidants – the perfect condiment if you are watching your blood sugars. It’s great topped on so many dishes such as eggs, grilled veggies, fish, quesadillas and taco bowls!

- 2 cups tomato, diced with the seeds removed
- 2 cups white onion, diced
- 1/2 cup cilantro, chopped
- 1 medium jalapeño, diced remove the ribs and seeds if you like it less spicy
- 2 limes, juiced
- 3/4 tsp salt

Instructions
- In a medium bowl add chopped onions and jalapenos. Make sure the veggies are cut the same size to maximize the flavour in every bite.
- Add the salt and lime juice to the jalapeno and onion mix. Let this mixture sit for a few minutes while you prep the other veggies.
- Chop the tomatoes and cilantro and add it to the mix. Taste and adjust the amount of salt if needed.
- Let the pico de gallo sit for about 15 minutes so all the flavours combine and enjoy!
