These muffins are so great for a quick after school snack or for breakfast! These baked goods are packed with chia seeds, Greek yogurt, dates, walnuts, and oatmeal.

Ingredients
- 3/4 cup whole wheat pastry flour
- 1/2 cup oats
- 1/4 cup chia powder
- 1/2 tsp salt
- 1-1/2 tsp baking powder
- 1/2 tsp cinnamon
- 2 tbsp coconut oil
- 1/4 cup maple syrup
- 1/4 cup plain Greek yogurt
- 1/2 cup milk of your choice
- 1/2 cup chopped walnuts
- 1/2 cup chopped pitted dates

Instructions
- In a bowl, combine the dry ingredients: flour, oats, chia powder, cinnamon, salt, and baking powder. minutes at 400 degrees.
- In a separate bowl combine the wet ingredients: egg, milk, coconut oil, Greek yogurt, and milk.
- In a seperate bowl add in the wet ingredients: egg, maple syrup, coconut oil, milk, and Greek yogurt.
- Add the dry ingredients to the wet ingredients. Stir to combine everything. Add in walnuts and pitted dates.
- Pour batter into lined muffin tins and bake at 400 for 25 minutes!
