24 Feb Kale and White Bean Soup
Soups are a fantastic way to get more veggies in your diet. If you are looking to lose weight, foods that have a high water content like soups – are great because you can fill up on a lot of volume with few calories. Choose soups that are water-based as opposed to cream based, and make sure your soup contains protein and fibre to really amp the fullness factor. This Kale and White Bean soup is a great choice to get in wholesome nutrient dense ingredients!

Ingredients
- 1 tbsp olive oil
- 2 medium carrots - peeled and diced
- 2 ribs of celery, chopped in half moon pieces
- 2 cups kale -finely chopped
- 1 medium onion, diced
- 4 cloves cloves of garlic, minced
- 1 tsp dired oregano
- 1 can cannellini beans (white kidney beans) rinsed nad drained
- 8 cups sodium free broth of your choice
- 1 tsp salt
- 1/2 tbsp red wine vinegar
- Splash of hot sauce
- black pepper

Instructions
- In a large saucepan turn heat to medium-high, add olive oil and sautee onions with salt and garlic for a few minutes.
- Once onions are translucent, add in celery, carrots
- Once veggies have softened, about 5 minutes add in kale and broth
- Add in oregano, black pepper, vinegar and hot sauce
- Stir in beans and let soup simmer for 10 minutes
- Add more pepper and salt to your liking!
