Ingredients

olive oil

carrots – peeled and diced
2
ribs of celery, chopped in half moon pieces

cups
kale -finely chopped

medium
onion, diced
4
cloves
cloves of garlic, minced
1
tsp
dired oregano
1
can
cannellini beans (white kidney beans)
rinsed nad drained
8
cups
sodium free broth of your choice

tsp
salt
1/2
tbsp
red wine vinegar
Splash of hot sauce
black pepper
Instructions
In a large saucepan turn heat to medium-high, add olive oil and sautee onions with salt and garlic for a few minutes.
Once onions are translucent, add in celery, carrots
Once veggies have softened, about 5 minutes add in kale and broth
Add in oregano, black pepper, vinegar and hot sauce
Stir in beans and let soup simmer for 10 minutes
Add more pepper and salt to your liking!
