Gingerbread Loaf

If you are looking to make a quick dessert – whether you are hosting a dinner or bringing a dish to a dinner party then this loaf is something you should make! It’s simple, easy and has some great ingredients. The flour is a mix of whole wheat and oats, the loaf also contains applesauce which makes it very tender. The icing is optional, but it does provide a flavourful and decadent touch!

Instructions
For the loaf
  1. Preheat the oven to 350 degrees. Grease a 9x5 loaf pan and set aside.
  2. In a medium mixing bowl, use an electric mixer to blend the softened butter and maple syrup until it is combined. Add the egg and vanilla and mix. Blend in the applesauce.
  3. Slowly add the flour, baking soda, and spices (ginger, cinnamon, cloves, and nutmeg.) When everything is mixed, pour the batter into your loaf pan.
  4. Bake for about 55 minutes or until a toothpick comes out clean.
  5. Allow the loaf to cool completely before frosting.
Frosting
  1. In a bowl add the softened cream cheese and powdered sugar and vanilla.
  2. Mix on low speed until everything is incorporated and fluffy.
  3. Spread a layer of the frosting on the cooled gingerbread loaf. Sprinkle on top with chopped walnuts and hemp hearts. Slice and enjoy!
