Cassava Fries

Cassava is a staple food enjoyed in Africa. They are used in stews and enjoyed as a snack in a chip form or as fries. Cassava fries are typically fried, but I made these in the acti-fry and they tasted great and are much healthier than frying! Once they are done cooking in the acti-fry I sprinkled some chili powder, sea salt, and a touch of fresh lime juice. If you don’t have an acti-fry you can easily make them in the oven.

  1. Bring a pot of water to boil on the stove and add the cassava for about 20 min until the cassava is fork tender. You will see the ends fray a bit. You can do this step in the instant pot too - Manual mode for 6 minutes. You may need to add more time if it’s not fork tender. Once cooked and cooled, cut in desired length - do not make them too thin. I make a batch and freeze small portions in a freezer bag.⠀
  2. Add the cassava to the actifry with 1 tbsp of olive oil or avocado oil. Set the timer for 30 min. If you are using the oven lay on a baking sheet, add the oil and place in the oven at 375 for 25-30 min - you may want to add more time to get the desired crispness. One it’s done sprinkle with sea salt, red chili powder and lime juice and enjoy!⠀
