11 Feb Avocado Chocolate Pudding
This creamy delicious and perfectly sweetened dessert is what you need to satisfy your sweet tooth! The best part is that its filled with wholesome good-for-you ingredients and happens to be grain free, dairy free and refined sugar-free! The avocados give this pudding a rich creamy texture and the addition of chia seeds help with achieving the right pudding consistency. Feel free to top with additional fruit and nuts. So good! The best part is that it’s super simple to make- just blend, chill and serve!

Ingredients
- 2 medium avocados
- 1/4 cup maple syrup you can a tbsp or more if you want a bit more sweetness
- 2 tbsp chia seed powder to make your own chia powder, blend chia seeds in a nutri bullet or coffee grinder
- 2 tsp vanilla
- 1/4 tsp salt
- 1/3 cup raw cacao powder
- 1/4 cup almond milk you may need to add more milk, start with 1 tbsp and adjust if needed. Feel free to use any milk you have
- 1/2 tsp cinnamon optional
- banana slices and unsweetened coconut flakes to garnish

Instructions
- In a food processor, add the flesh of 2 avocados, milk, maple syrup, chia powder, cinnamon (if using), vanilla, raw cacao and salt.
- Blend on high for a few minutes. Turn food processor off and open the lid to scrap the sides of the bowl. Add a bit more milk or maple syrup if needed. Blend again for a few minutes.
- Once pudding has achieved a creamy consisitency pour into small containers.
- Top chia pudding with fresh fruit slices and unsweetened coconut shavings. Cover the pudding cups and place in the fridge to set for about an hour or 2.
