12 Mar Banana Oat Bread

Ingredients
- 1 cup whole wheat pastry flour
- 1 cup oat flour use a powerful blender such as a Vitamix to blend large oats
- 1/2 tsp salt
- 3/4 tsp baking soda
- 1 tsp cinnamon
- 1/2 cup maple syrup
- 1/4 cup coconut oil or butter melted
- 2 large eggs
- 1 tsp vanilla
- 3 medium bananas mashed
- 2 tbsp almond milk or any milk
- 1/3 cup Greek or Icelandic vanilla yogurt I used President Choice 4% vanilla Skyr (see link above)
- 1/4 cup dark chocolate chips
- 1/3 cup chopped walnuts

Instructions
- Preheat oven to 350 degrees
- Lighly spoon flour mixture into measuring cups and level with a knife. Combine flours, baking soda, cinnamon and salt in a bowl stiring with a fork.
- place maple syrup and butter (or coconut oil) in a large bowl and beat with a mixture at medium speed until well blended about 1 minute.
- Add the eggs, 1 at a time, beating well after each addition.
- Add bananas, yogurt, and vanilla; beat until blended.
- Add flour mixture; beat at low speed until combined - do not over mix! You may need to add some milk if batter is too thick.
- Stir in chocolate chips and nuts. Spoon batter into an 8.5 x 4.5 loaf pan coating with some butter or cooking spray.
- Bake at 350 for 55 minutes or until a wooden pick insterted in centre comes out clean.
- Cool for about 10 minutes ; remove from pan and let cool further on a wire rack. Enjoy!
