whole wheat pastry flour

oat flour
use a powerful blender such as a Vitamix to blend large oats
1/2

salt

baking soda

cinnamon

maple syrup

coconut oil or butter melted

eggs

vanilla

bananas mashed

almond milk or any milk

Greek or Icelandic vanilla yogurt
I used President Choice 4% vanilla Skyr (see link above)

Instructions
Preheat oven to 350 degrees
Lighly spoon flour mixture into measuring cups and level with a knife. Combine flours, baking soda, cinnamon and salt in a bowl stiring with a fork.
place maple syrup and butter (or coconut oil) in a large bowl and beat with a mixture at medium speed until well blended about 1 minute.
Add the eggs, 1 at a time, beating well after each addition.
Add bananas, yogurt, and vanilla; beat until blended.
Add flour mixture; beat at low speed until combined – do not over mix! You may need to add some milk if batter is too thick.
Stir in chocolate chips and nuts. Spoon batter into an 8.5 x 4.5 loaf pan coating with some butter or cooking spray.
Bake at 350 for 55 minutes or until a wooden pick insterted in centre comes out clean.
Cool for about 10 minutes ; remove from pan and let cool further on a wire rack. Enjoy!
