A healthy twist on a traditional salad. Swapping kale leaves for romaine will provide a nutritional punch by supplying more vitamins, minerals, fibre, and protein. Also, the creamy dressing in this salad is made from low-fat Greek yogurt which cuts back on calories and fat compared to traditional caesar dressing. Adding in crunchy roasted chickpeas such as the goodbean can take the place of croutons or be a nice addition to boost protein. Even though this salad is healthy it still has so much flavor!

Ingredients
Kale Salad
- 4 cups kale leaves tear from tough stems and wash thoroughly
- 1 tsp olive oil
- salt and freshly ground black pepper
- 1/2 lemon juiced
- freshly grated Parmesan

Dressing
- 2 tbsp low-fat plain Greek yogurt
- 2 cloves cloves of garlic, minced
- salt and freshly ground black pepper
- 2 tsp fresh lemon juice
- 1 tsp dijon mustard
- 2 tsp worcestershire sauce

Instructions
- Dry kale leaves and toss in a large bowl. Massage with olive oil and add salt and pepper, juice of 1/2 a lemon and freshly grated Parmesan cheese.
Dressing
- In a small bowl, combine the ingredients of the dressing and mix well. Add dressing to salad before serving. Topp with another squeeze of lemon and roasted chickpeas
