- 1 head romaine lettuce - washed, dried, and chopped
- 1 cup cherry tomatoes cut into havles
- 1 English cucumber cut into halves, then sliced
- 1/2 small red onion, sliced
- 1/2 cup sliced radishes
- 1/4 cup mint leaves chopped
- 1/4 cup parsley, chopped
- 1/2 cup homemade or storebought pita chips
Dressing
- 1/3 cup extra virgin olive oil
- juice of 1/2 a lemon
- 2 tbsp balsamic vinegar
- 1 clove garlic, peeled and minced
- 1/2 tsp salt
- 2 tsp ground sumac
- 1 tbsp honey (optional)

Instructions
- Prepare the dressing in a small bowl and mix until it is nicely combined. Taste the dressing and adjust seasoning if needed.⠀
- Toss the veggies and herbs into a large serving bowl.
- Once ready to serve, add in pita chips and pour half the dressing and toss the salad, add more dressing if needed.
- Serve immediately and enjoy!⠀
