Cranberry Orange Spiced Granola

This granola is perfect for the holidays – I plan on giving these yummy jars filled with granola as gifts. I don’t know about you but I always have such a hard time with gift giving.  I always want to give something useful and thoughtful but it’s so hard! I find homemade treats are always a win especially if they are filled with wholesome goodness! The warm spices of cinnamon, nutmeg, and cloves are so warming during the winter months. Plus you can make a huge batch of this granola in a short amount of time. Feel free to add in whatever you would like. I kept this nut free, but pecans and walnuts would make excellent additions.  Enjoy this delicious granola on top of yogurt, or as a cereal with some milk – or my personal fave just have it on its own!

Instructions
  1. Preheat the oven to 350 degrees.
  2. In a large bowl combine the oats, buckwheat flakes, unsweetened coconut flakes, pumpkin seeds, sunflower seeds, hemp hearts.
  3. Add the salt, and remaining spices. Mix to combine.
  4. Add in the melted coconut, maple syrup, honey, vanilla, and cranberries.
  5. Mix everything with a spatula, then add in orange zest and use your hands to make sure granola mix is thoroughly incorporated.
  6. Transfer the granola to a baking sheet that is lined with parchment paper. Press the granola down and bake in the oven at 350 for 20-22 minutes or until golden brown.
  7. When the granola is halfway done cooking mix the granola with a wooden spoon and press down.
  8. Once the granola is done, let it cool completely. This may take up to 45 min. Don't worry if the granola is soft it will harden as it cools.
  9. Once cooled, store in an air tight container and it will last for a week!
