27 Oct Homemade Chicken Fingers
A simple and delicious chicken finger recipe that has the perfect crispy coating on the outside and a tender, juicy and flavourful inside. This is a simple dinner that the whole family will enjoy – round it out with some steam veggies or a salad and enjoy with your fave dipping sauce. I used panko whole wheat bread crumbs to get a crispy coating and added flax seed powder in the mix to increase fibre and provide an omega 3 boost.

Ingredients
- 1 lb chicken breast Use a meat mallet to thin the chicken breast to 1/4" - 1/2" thickness
- 2 tsp flax seed powder
- 1.5 cups whole wheat Panko bread crumbs I toasted the panko to make the chicken fingers extra crispy, this step is optional
- 1 large egg
- 1 tbsp mayonnaise of choice, I used avocado mayo
- 1/2 tsp salt
- Fresh black pepper
- 1 tsp garlic powder
- 2 tbsp dijon mustard

Instructions
- Turn the oven on to 300 degrees. Spread panko breadcrumbs on a baking sheet that has been sprayed with cooking spray. Toast in the oven for 5 minutes. Once done remove from oven and set aside. Mix in the flax seed powder.
- Prepare the chicken tenders by using a meat mallet to make sure they are the same thickness. This ensures even cooking. Cut chicken to the desired size making sure they are close in size,
- Prepare the batter in a medium bowl. Add in beaten egg, mayo, mustard, and seasoning. Add the chicken pieces and make sure all the chicken pieces are nicely coated.
- Take each chicken tender and place it on the panko and flax mix. Make sure the chicken is coated on each side. Continue until all chicken pieces are coated.
- Place in the air fryer and cook for 12 min. Flip at the halfway mark. To make sure they are fully cooked you can insert a kitchen thermometer, it is cooked once the internal temp of chicken reaches 165 F. If you are using the oven bake at 375 for 12-15 minutes. Be careful and avoid overcooking as the chicken will dry out. Enjoy with your favourite dipping sauce.
