- 1 grilled chicken breast, shredded or 2 cups of cooked chicken - rotisserie also works well!
- 1/4 small pear, finely diced
- 1-2 tbsp mayonaise
- 1 tsp dijon mustard
- salt and pepper to taste
- 1 tbsp fresh parsley, chopped optional
- 1/4 cup chopped celery
- 1 tbsp chopped red onion
- 1 tbsp chopped walnuts
- romaine lettuce leaves
