Semi-Homemade Fish Tacos

As a busy mom, getting a quick weekday meal together is essential especially on days when the kids have activities. Taking advantage of ready-made items at the grocery store is a huge time saver. Adding veggies is such an easy and delicious way to round any meal and boost nutrition!

I picked up these fish bites along with a broccoli slaw to make this meal!

  1. Cook fish bites according to package directions.
Guacamole
  1. While fish bites are cooking, prepare the guacamole. In a large bowl, scoop the insides of avocado add the garlic, tomato, onion, seasoning and cilantro. Add more lime juice if needed. Set aside
Spicy mayo sauce
  1. In a bowl add the mayo, lime juice, and seasoning. Slowly add the water to thin mayo out. More water may be needed until a thin consistency is reached.
  2. Once tortillas are warmed up, place 4 fish bites on each corn tortilla, add slaw and some guacamole. Top with spicy mayo sauce and garnish with cilantro and a fresh squeeze of lime juice
